Citric Acid

Citrus Acid is a great preservative method when used in conjunction with Sodium Benzoate. 

Some formulations work better with more or less citric acid than the suggested formula. More citric acid added to a strawberry flavor can heighten the flavor profile. Without increasing flavor, the next attempt is to alternate the citric acid levels.

In our Snow Cone Recipe when using Cotton Candy flavor try going up to the 12-pound level. You should find that compared to 4 pounds of citric acid the higher level will increase the cotton candy flavor and make it stand out.

Another instance is when adding more citric acid to a Pina Colada beverage when adding more citric acid you will increase the pineapple flavor and decrease the coconut flavor.

As always do check your pH levels to make sure you are still within the preservative levels.
