Margarita Mix - Just Add Alcohol Recipe

Yield: 100 gallons of finished Margarita Mix.

INGREDIENTS QUANTITY UOM
Water  85.75 gal.
Sodium Benzoate 1 lbs. 
Sugar (Dry) 175 lbs. 
Citric Acid 8.5 lbs. 
Flavor (Margarita Flavor Natural 101940) 1 gal.

 
Instructions:

1. Heat water to 100 - 120 F. This will make dissolving powders easier and quicker.

2. Add in Sodium Benzoate, and mix until dissolved.

NOTE: Must completely dissolve before proceeding to avoid crystallization when Citric Acid is added later.

3. Add in Sugar, and mix until dissolved.
4. Add in Citric Acid, and mix until dissolved.
5. Once the mixture has cooled then add in flavor.
6. Test finished product for:
     BRIX = 20.6 ± 1.
     pH = 3.45
7. Then bottle and pack.

Package: 33.333 cases of 32 oz / 12 pack bottles.

Intended Use: 
Combine and mix together 4 fl. oz. of Margarita Mix and 2 oz. of tequila. Pour over ice and serve. A salted rim is optional.
