Snow Cone Syrup Recipe
Yield: 100 gallons of finished snow cone syrup.
INGREDIENTS | QUANTITY | UOM |
Water (Hot) | 61 | gal. |
Sodium Benzoate | 0.5 | lbs. |
Sugar (Dry) | 500 | lbs. |
Citric Acid | 4 (up to 12) | lbs. |
Flavor (Liquid) | 1 | gal. |
Instructions:
1. Heat water to 100 - 120 F. This will make dissolving powders easier and quicker.
2. Add in Sodium Benzoate, and mix until dissolved.
NOTE: Must completely dissolve before proceeding to avoid crystallization when Citric Acid is added later.
3. Add in Sugar, and mix until dissolved.
4. Add in Citric Acid, and mix until dissolved.
5. Once the syrup has cooled then add in flavor.
6. Test syrup for BRIX at 49 ± 2. Then bottle/pack.
Intended Use:
Pour syrup over the top of finely shaved ice to taste. Approx. 2 fl. oz. of snow syrup for each snow cone cup (4-6 oz).
